lemon ricotta cookies with lemon glaze

two thoughts:

1. parchment paper rocks my kitchen world. it is seriously the best kitchen invention ever & I'm not sure how I survived 31 years without it. it almost deserves an entire blog post, and no, it's not the same thing as waxed paper.

2. ricotta cheese & the whole reason for this post... I always buy ricotta cheese & then forget about it until it goes bad... or I don't use it all up in time. it almost happened again, so I googled ricotta cheese recipes & found this little gem; thanks, giada.
I just pulled them out of the oven, so I haven't glazed them yet or let them cool, but so far, so delicious! I'll bring some to book club on friday... if there are any left...

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 stick unsalted butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 (15-ounce) container whole milk ricotta cheese (I used "part skim")
  • 3 tablespoons lemon juice
  • 1 lemon, zested (I used dried orange peel)
Oven to 375ยบ F.

In a medium bowl combine the flour, baking powder, and salt. Set aside.

In the large bowl combine the butter and the sugar. Using an electric mixer beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating until incorporated. Add the ricotta cheese, lemon juice, and lemon zest. Beat to combine. Stir in the dry ingredients.

Line 2 baking sheets with parchment paper. Spoon the dough (giada says "about 2 tablespoons for each cookie," I say "1TB or less for each cookie & leave some space, these babies spread.") onto the baking sheets. Bake for 15 minutes, until slightly golden at the edges. Remove from the oven and let the cookies rest on the baking sheet for 20 minutes.

Glaze:

  • 1 1/2 cups powdered sugar
  • 3 tablespoons lemon juice
  • 1 lemon, zested

Combine the powdered sugar, lemon juice, and lemon zest in a small bowl and stir until smooth. Spoon about 1/2-teaspoon onto each cookie and use the back of the spoon to gently spread. Let the glaze harden for about 2 hours. Pack the cookies into a decorative container.

Yeah! I guess that wasn't so hard after all. This vegie recipe of Sara's is great. I made it for a RS meeting and it went really fast.

Kristen, This is Sweet!

So I read that Kristen is wondering we aren't all chipping in, but I am just trying to figure this out. Honestly I have no idea what I am doing, or how to post on Sweet Teeth and just wondering if this will work. I am enjoying the recipes and just used the banana cake recipe because it was easier than searching through my recipe drawer. If this post works, plan on a recipe from my kitchen in the near future. Alanna please post your pancake recipe!

Thanks

Thanks for throwing me the shower this morning, it really meant a lot to me. since there was food there I figured this was an alright place to say thanks. Plus it was pancakes- if anything is blogworthy, it is Pancakes- I love pancakes- it was perfect. I was so nervous when we first moved here that I would have no friends- days like today I realize how silly that was of me to think, I couldnt ask for better friends.

So I dont have any great recipe to put on her--- yet. I just wanted to experiment and see if i could even figure out how to add a post (I think that is what it is called). I love reading everyones blogs and hopefully I will have something great to add soon. you guys are the greatest, i cant imagine dental school without all of you. Alright lets see if this works. . .

Sweet Tooth

First of all I love the name of this blog! I wanted to tell you all about Sweet Tooth. It is a wonderful bakery, ice cream shop and dessert hang out in downtown Buffalo. Jay and I have been there a couple of times. We have also experienced their cakes, pastries, etc. at a couple of parties. They recently reopened after moving and upgrading! Their chocolate is absolutely fabulous!
There is another new place downtown called The Chocolate Bar. It is located on the corner of Delaware and Chippewa! I went to one of these in Chicago, but have never been to the one here in Buffalo. If anyone is ever craving dessert and would like to check out downtown let me know! There are a lot of great eats on Elmwood, Hertel and Chippewa!

welcome!

well, here it goes... the dental wives food club blog.

since our husbands study so much, we always have a reason to get together. and getting together is always a reason to eat. and eating is reason to make something new... you get the idea. now we have a place to share & save all of our delicious recipes. and by the end of this fun four year adventure together, we will all have much bigger recipe boxes. of stuff we've actually tried & liked. hopefully WE aren't much bigger though!

so come on in, bring your appetite & lets EAT!
